Vegetarian Paella

I've tried Paella in many places and always wanted to make my own but was too scared as it's usually a long process.
I had a small pack of paella rice so I thought I'd give it a go and see how it turned out. I've got to say, it was delicious :)

Ingredients:

2 cups of paella rice
1 red onion diced
1 yellow and 1 red Bell pepper (diced)
1 tsp 3G Paste paste (ginger,garlic,green chili)
1 pint vege stock
salt (as needed)
half tsp red chili powder.
1 chopped tomato/cherry toms
2 vegetarian sausages (cooked) 
1 tsp turmeric
1 tsp curry powder(optional)
boiled water for stock and soaking rice and additional adding of water.
2 tbsp vegetable oil each for sausages and onions.
Preparation Method:

Firstly Gather all your ingredients and equipment.
Boil some water in a kettle and pour it over the rice in a large bowl and let the rice soak for 20 minutes. then strain.
Put 2 tablespoons of vegetable oil in a frying pan and cook your sausages. They should be cooked and browned in 15 minutes.


While you are waiting for the rice and sausages to get done, start chopping your onion and peppers so you are ready to go .



Slice the sausages and cut the slices in half.


Strain the the rice and put it back into the bowl.
Now put some oil into a large pan and when hot enough ad the diced onion and saute for a few minutes until soft.
Add 1 tsp 3G Paste and mix quickly for a minute.


Now add in the paella rice and give it a good stir.

Add the pepper and stir well.


Now add in the pint of vege stock and add the turmeric,chili powder , curry powder and salt to taste.
Bring this to a boil and simmer for 10 minutes (uncovered)
The water will get absorbed quickly so have the kettle boiled to add more as needed.
After 10 minutes the rice will still have a bite to it.
Now add in the chopped tomato and sliced sausage and gently stir in. 


Cover the pan for another 10 minutes keeping an eye on it.
Add water if needed. Cook until nearly all of the water is absorbed but not all. This dish should not be dry.
If you don't have a lid for the pan that you are using, you can use tin foil to cover it like I did.


Now the Paella should be cooked and the rice will be soft.


Serve in a large bowl and enjoy :)
