Cherry Scones

Cherry-licious Scones




As The cherry sponge cake was a big hit with readers and those who've tried it, so I decided to make these cherry scones.
I have to admit, for a first time try, they were absolutely delicious (cherry-licious) You must give it a go :)

Ingredients:
4 cups self rising flour
pinch of salt
teaspoon of baking soda
cup of sugar
glace cherries roughly chopped
2 table spoons of butter/margarine
cup of milk (as needed)
Vanilla essence (optional)

Preparation Method:
Pre heat oven to 220
Sift flour, salt and baking powder into a mixing bowl
Add butter and rub into the flour with finger tips until it resembles breadcrumbs
add sugar and chopped glace cherries
Add vanilla essence (if using)
Slowly add a little milk at a time stirring with a knife ( not hands as over mixing will result in hard scones)
Stop adding milk once the mixture  resembles a soft dough.
Turn out on a floured surface (I used my hands to form rounds 1cm thick) but you can use a cutter.
Grease a baking tray and place the rounds on it and brush with milk.
Pop into the oven for 12 minutes.
Enjoy on it's own with a cuppa or split through the center and spread some jam and cream ( yummy)
