Pickled Green chilies ( Khata marcha)
Everyone in my family had this pickled chilies in their fridges, ready to be served up with savoury snacks and even as a pickle with dinner. I loved them :) it's very easy to make too.
bottle of lemon juice
Take the tops of the chilies and put in a air tight jar (clean)
top up the jar with a whole bottle of lemon juice, a table spoon of turmeric and a table spoon of salt.
Give it a good shake and leave in a cool place.
Tell whoever that goes in the kitchen to give the jar a shake every so often.
The chilies will be ready in 2 weeks ( it's worth the wait)
Don't worry if you see white crystals forming on the top, it's only the salt, just give it a shake.
The chilies are ready when they are slightly paler and softer.
You can either eat them as they are with a savoury snack or dinner or use them in cooking.
Make sure the chilies are ALWAYS covered in the lemon juice and water or they will go bad.
You can use this pickling method with lemon, lime and green mango :)
