Dry potato curry

Also known as koru bateta nu shaak.

This dry potato curry is mine and my brothers favourite quick curry! It's so tasty and very simple to make. It goes great with chappatis , rice and daal or on it's own with a big dollop of Greek style yogurt (yummy) 

Ingredients:
3-4 medium potatoes
Cinnamon stick
Turmeric
whole cumin seeds
mustard seeds
pinch of Asafoetida ( aids digestion) ( optional)
Table spoon of vege oil
3G paste( ginger, garlic and green chili)
pinch of cumin and coriander powder
Fresh coriander
Salt to taste 

Preparation method:
Cut the potatoes into chunks and par boil for 10 minutes ( to ensure getting soft fluffy chunks when cooked)
Add a table spoon of oil into a large pan
When the oil is hot enough add :
1 tea spoon of whole cumin seeds
pinch of mustard seeds
cinnamon stick
pinch of asafoetida
1 tea spoon of 3G paste
Give it a quick mix and add the potatoes(drained)
Gently mix in all the spices to coat the potatoes
sprinkle a tea spoon of turmeric over the potatoes, this will give a great yellow colour to the curry.
sprinkle a pinch of cumin and coriander powder and mix well
Add salt to taste.
Heat through on a medium heat
Before serving put some chopped fresh coriander on top.
