Butter Milk Cheese Scones

I had some butter milk left over from last night as I made some homemade Butter. It would be a sin to just throw it away so I decided to store it in a small Tupperware tub and leave it in the fridge to use for baking.
Anyway I decided to make these yummy Buttermilk Cheese scones and use it up :) They are so tasty and a few calories are cut out as the butter is replaced with oil :).
Give it a go.
If butter Milk is not readily available to you, by all means use ordinary milk, they will be just as delicious.

Ingredients. 

2 cups of self raising flour
1 pinch of salt
1 tsp baking powder
1 tsp chili powder/cayenne pepper (optional)
1 cup of cheddar cheese (grated) and extra for topping.
3 tsp Oil
150 ml Butter Milk/milk ( you may need more if the dough is too dry.)
1 egg

Preparation Method :
Pre heat the oven to 180



Sift flour,salt,baking powder and cayenne pepper into a large bowl.



Grate cheese (1 cup)



Add cheese to the flour and mix through.



In a separate bowl add one egg, oil and the buttermilk/milk and whisk .



Add the Milk mix into the flour and mix together with a knife until it clumps together (but not too dry) Add a splash of milk if it's too dry.



Press the dough out lightly onto a floured surface until it's about 5 mm thick. Don not roll out with a rolling pin, use hands only. Fold the dough in half and press down again until  5 mm thick. Folding the dough will enable the scones to have that natural "break" to cut in half.



Cut out your scones with a round cutter of your choice or a glass and place them on an un greased baking tray. And repeat the process until all the dough is used up.



Brush the scones with milk and top with a sprinkle of cheese and pop them in the oven for 15 minutes.



Let the scones cool slightly.



Enjoy with butter or any spread of your choice or just eat them as they are :) yummy.
