Egg-less Blueberry Sponge Cake

This egg-less cake is very easy to make and delicious with a cup of tea or coffee so give it a go :)

Ingredients :
1 small punnet of fresh Blueberries
1 and 1/2 cups of self raising flour
1/2 tsp baking powder
1/2 tsp baking soda
1 cup of granulated sugar
1/3 cup of milk 
3 tbsp melted butter
2 tsp vanilla extract

Preparation Method:

Pre heat oven to 180

Sieve flour,baking powder and baking soda into a large bowl.
Now add the sugar, melted butter, vanilla extract and milk and mix thoroughly to make a nice batter.

Now add the Blueberries and Gently fold into the batter without bursting any.

Grease and flour a cake tin.

Carefully pour the batter into the cake tin and spread evenly with a spatula.

Now pop it in the oven for 25-30 minutes. Oven temps vary so please check your cake after 25 minutes to see if the skewer comes out clean, if not put it back in the oven. Sometimes cakes can take up to 40 minutes so keep an eye on your cake :)

It's out of the oven , isn't it gorgeous :)

Sprinkle some icing sugar on the top for decoration.

Ooooh look at that yummyness :)

Slice an extra large slice for yourself and indulge with a cuppa :)
